This week's letter is C, a letter which we only use in the Norwegian language in names and in words we borrow from other languages. I didn't know what to photograph, until yesterday's dinner! I made taboule, and the main ingrediense is Couscous! You'll find more posts with C here.
Here's the recipe:
Prepare 4 portions of couscous. Add a dressing:
1 tablespoon (or more) of chrushed carlic, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/4 cup lemon juice, 1 teaspoon lemon zest, 2 - 3 tablespoons chopped, fresh mint or 1 teaspoon dried, 1/3 cup olive oil
Add the dressing to the couscous together with: 1 cup chopped parsley, 1 chopped, small red onion. Mix well.
At this stage, the taboule will keep in the fridge for several days. And now for the fun part: Add your favourites for a salad! I added shredded lettuce, aspargus, shrimps and tomatoes.
